Region notes
Located in the southern part of Burgundy, at the North limit of Beaujolais area, Pouilly-Fuissé is the top of the Mâconnais wines, in the heart of the great whites appellations (Fuissé, Pouilly-Loché, Pouilly-Vinzelles and Saint-Véran).

Winemakers comments
Pouilly Fuissé is produced exclusively with Chardonnay grapes. The production is small (700 hectares planted) and cover steep slopes of the village of Fuisé, Solutré, Pouilly, Vergisson and Chaintré, on which the soils are a mixture of clay and chalk from the Jurassic era.

Mixed salads, soja salad, vegetable tempura, seafood , sushis, nems, cheviche, salmon tartar, vegetarian cuisine : vegetable tart, fennel, zucchini fritters, vegetable gratin, wok noodles, vegan burger, fish & chips, chicken yakitori, escargots, oeuf en meurette, frog legs with parsley, goat cheese.

Vinification
The various wines are blended after a traditional vinification. Aging lasts 8 to 10 months in oak barrels from our cooperage or in stainless steel vats before being bottled.

Cellaring potential
2-5 years, depending on the vintage.
